We took half a can of black beans and a 1/4 can of Trader Joe’s Salsa Verde and combined them in a pot. We let them marinate and simmer for five minutes and turned off the heat and let it sit. Meanwhile, we diced our half tomato and toasted our corn tortillas until they were golden brown.
We then set the tortillas on the plates and topped them with the black bean and salsa verde mixture, shredded Mexican cheese and diced tomatoes, and got to workin’ on the poached eggs!
Now, poached eggs are a little tricky. But once you get the hang of it, they’re a breeze. First, add 1 inch of water to a pan with 1 tbs. of white vinegar. Then bring to a simmer. Next, crack the cold, fresh eggs individually in ramekins and slowly slide the eggs into the simmering water. Slowly!!! “Slow” and “careful” are the key to perfect poached eggs. Once the eggs are in the water, cover and let sit for 5 minutes with the heat off. Don’t touch that lid, no matter how much you want to! After 5 minutes, remove the eggs with a slotted spoon (carefully, obviously) and put on top of the dish.
Top with dashes of hot sauce. Option to add guacamole and sour cream! Obviously we added guacamole because, guacamole is life.
Huevos Rancheros with Poached Eggs
COOK TIME: 15 minutes
2 corn tortillas
4 large eggs
1 tbs. white vinegar
1/4 cup shredded Mexican Cheese
1/2 can black beans (washed)
4 tbs. salsa verde
Dashes of hot sauce
(optional) guacamole and sour cream
Add the black beans and salsa verde to a pot over medium heat and heat for about 5 minutes to let marinate. Turn off the heat and let sit. Meanwhile, dice the 1/2 tomato.
Toast the corn tortillas in a toaster oven until golden brown. Set on plates.
Top the corn tortillas with the black bean & salsa verde mix, add shredded Mexican cheese. Add diced tomatoes.
POACHED EGGS: add 1 inch of water to a pan with 1 tbs. of white vinegar. Bring to a simmer. Crack eggs individually in ramekins and slowly slide the eggs into the simmering water. Cover and let sit for 5 minutes with the heat off. Don’t touch that lid! After 5 minutes, remove the eggs with a slotted spoon and put on top of the dish.
Top with dashes of hot sauce. Option to add guacamole and sour cream!
