Sometimes you need a really good burrito bowl that doesn’t contain 2x your daily sodium intake and doesn’t require you to stand in line for 35 minutes (ahem, Chipotle). Our healthier version of a classic burrito bowl will become your next go-to on a hungry weeknight. Now, we make a LARGE portion because we like to eat this for the next 3 days lunch 🙂 There are a few components to making each ingredient, but none of it is taxing.
We like to use quinoa instead of rice because of the obvious health benefits – and it is so much tastier! Cook your quinoa according to the package instructions. Next, chop your cilantro and add to the cooked quinoa. Set aside. Cook black beans according to can with juice of one lime and the zest one lime on top. Make sure to drain that can first! Pan sear your chicken breasts seasoned with garlic salt, pepper and lime juice of the zested lime. No limes go to waste in our kitchen. Chop into pieces when cool, and set aside. Cook corn and add chopped red onion for your delicious corn salsa. For the sautéed veg, slice red onion and yellow pepper and sauté in the same pan you cooked the chicken breast to get all those great flavors. Shred your cheese of choice!
Combine all ingredients in a bowl, add guacamole and enjoy! Option to put in a tortilla.
Healthy Burrito Bowl – Chicken Quinoa
CHICKEN: 2 chicken breasts (seasoned with garlic salt, lime juice and pepper)
CORN SALSA: 2 ears of corn, 1/4 red onion chopped
SAUTÉED VEG: 1 yellow pepper, 1/4 red onion sliced, olive oil
BLACK BEANS: 1 can black beans, juice f 1 lime, zest of 1 lime, 3 tbs. siracha sauce
QUNIOA: 1 cup quinoa cooked, 1/4 cup chopped cilantro
2 chicken breasts
1/2 red onion (1/4 chopped, 1/4 sliced)
2 ears of corn
1 yellow pepper
1 can black beans
3 tbs. siracha sauce
1 cup shredded cheese of your choice
1/2 cup quinoa
1/4 cup chopped cilantro
2 limes (two juice, one zest)
Guacamole for serving
Cook your quinoa according to package instructions. Chop your cilantro and add to cooked quinoa.
Cook black beans according to can with juice of one lime, zest one lime on top.
