We recently went to Wegman’s and found a glorious looking pork butt (pork shoulder) for only $9. This baby was six pounds and we knew we had to make magic with it. We decided to make chopped pork in the slow cooker because we had a busy weekend ahead of us. Slow cookers are a serious life-saver when you want a flavorful meal during a busy week. We threw the butt in the slow cooker on Sunday morning and had two weeks’ worth of meals ready to go!
This is super easy and fool proof, and can be transformed into many different meals. Chopped Pork and rice, a sandwich with coleslaw, or carnitas! The possibilities are endless with this versatile meat. First, chop your sweet onion and throw it in the slow cooker as the base. Next, sprinkle salt, pepper and paprika onto your pork shoulder and massage the spice into the meat. For the marinade, mix together chicken broth, citrus marinade or BBQ sauce, garlic and brown sugar. Place your pork shoulder on top of the onions in the slow cooker and pour your marinade over the meat. Set your slow cooker to low, and cook for eight hours.
When the meat is fully cooked, take it out of the slow cooker (carefully) and place on a cutting board. Remove the bone, and roughly chop with a knife. Not only is chopping the meat so much easier than pulling it with forks, but it also more effectively preserves the meat’s tenderness in our opinion. Next, put your chopped pork back into the slow cooker to marinate once more in the savory juices. Serve in any fashion you would like! We put half of our meat in the freezer to save for a rainy day. We used the fresh half for sandwiches, platters and carnitas that week. Incredibly easy, low maintenance, yet flavor blasting meals.
Easy Slow Cooker Chopped Pork
1 large sweet white onion
6 lb Pork Shoulder
1 Tbsp salt
1 tsp black pepper
1 tsp paprika
1 cup chicken broth
1 cup citrus marinade or BBQ sauce
3 large garlic cloves, pressed
2 Tbsp brown sugar
Chop one large sweet onion and place aside. Rub the pork shoulder with salt, pepper and paprika. Mix together chicken broth, citrus marinade (or bbq sauce), garlic and brown sugar. Put the chopped onions on the bottom of your slow cooker and place your pork shoulder on top. Pour the marinade over the shoulder and cook on low for eight hours.
Carefully take out of the slow cooker, remove the bone, and roughly chop with a knife. Place the chopped pork back into the slow cooker for 30 minutes to soak up additional juices. Serve with additional BBQ sauce and rice, in a sandwich with coleslaw, or as carnitas! Enjoy.
