This healthy alternative to cabbage coleslaw is not only healthier, crispier and delicious-er but offers you more vitamins and fiber. We switched to broccoli slaw a couple of years ago and haven’t looked back. What is broccoli slaw, you ask?! We’re glad you did. Shredded cabbage is simply substituted by shredded raw broccoli stalks. Mmmmmm. This coleslaw is super easy to make and it goes great on turkey sandwiches or as a side!
First, dump the package of broccoli slaw in a large mixing bowl. Add 4 oz. of light mayonnaise (regular mayonnaise if you’re feeling a bit naughty), 3 tbs. sweet pickle juice (no sugar added!), and salt and pepper to tastes. Mix all of these goodies together until it is combined, and voila! Sweet, tangy, delicious broccoli slaw coleslaw.
Broccoli Slaw Coleslaw
1 package broccoli slaw mix
4 oz. light mayonnaise
3 tbs. sweet pickle juice (no sugar added)
salt and pepper to taste
Mix in a large bowl the broccoli slaw mix, mayonnaise, pickle juice and salt and pepper. Serve room temperature.
