This super simple and quick breakfast has will fill you up with wholesome ingredients.
This 4 ingredient dish takes 10 minutes at most to make, so it is perfect for the morning on-the-go, or a late morning (let’s be honest, afternoon) after a night on the town. It has some great natural sugars and protein.
First, mash two bananas in a bowl until creamy. Some clumps are okay (I actually prefer them)! Pit and chop up the dates and walnuts and add them to the mixture along with one large egg.
Pour mixture in a hot, medium-sized non-stick skillet (or add butter) and let brown for five minutes. The natural sugars in the fruit will allow the mixture to brown up nicely! Chop the pieces up with your spatula to make a hash, and continue to brown the pieces until they are as crispy as you like.
Meanwhile, fry an egg to sunny side up, over-easy, poached, or soft boiled and place on top of mixture. You’re looking at a delish sunny side up egg that we decided to go with this particular morning. This dish is quick and full of nutrients for a healthy start to your day!
Banana Date & Walnut Breakfast Hash
2 ripe bananas
1/4 cup chopped walnuts
4 pitted and chopped medjool dates
3 large eggs
Place peeled bananas in a bowl and mash until creamy. Add dates and walnuts to the banana mixture. Stir in one large egg and mix until smooth.
Heat a non-stick skillet (or add one tablespoon of butter) and pour the banana mixture in the skillet. Let the mixture cook for two minutes. Then chop up the mixture into pieces and continue to cook until it is crispy and light brown (about 5 minutes).
Meanwhile, add two eggs to a non-stick skillet (or add one tablespoon of butter) and fry to your liking. We used sunny side up eggs this particular morning, but poached, over easy, soft-boiled, will all work.
Add the egg to the top of the banana hash and enjoy!
